To answer you in brief:

Xen Kernels

You don't need to install a Kernel inside your guests, as they run the kernel from the host system. (The one that is referred to in the xen-tools.conf file.)

That means you can ignore the Sarge kernels.

vif defaults

Good idea, I will do that.

I can't force it, or update it, because people may have strange defaults but I can certainly warn about it.
