Or ...

dpkg --purge `dpkg --get-selections | grep deinstall`

or

apt-get remove --purge package
or
in case of postfix exim change

apt-get install --purge postfix ( removes + purges exim and installs postfix )

or

dpkg --purge package remove the configuration files.
