Dovecot, it does POP3-SSL and IMAP-SSL and is dead easy to use and supposedly very secure.

Naturally it's in Debian, so you just need to type aptitude install dovecot-pop3d and you should be done. All I remember telling it was where to find mailbox files and what type they are.

Remember, every year you will need to regenerate it's SSL certificate.
