(If you just include the sloppy line it won't do that.) The same way that the security repositories work. However, these are not newer versions of the code (despite the fact that "volatile" and "unstable" are synonyms) just newer versions of the data files associated with it - which, in the majority of cases, should be desirable. spamassassin differs from this rule, which is why it's in the "sloppy" sub-release.
