There is no reason to rewrite all mails just because there is a new one arriving.
Databases are only good for maintaining the metadata, the mail itself should be stored elsewhere.

As long as I can get at my mail store via IMAP-TLS I'm happy.
mbox is easier deal with but I'm willing to believe that maldir is technically superior. In my case I had mbox files already and Dovecot was happy to deal with them as they were, no messing required.

maildir is great, but the single selling point of a database store is the ability to store attachments once. for a big company, this is a plus.
